We source as much as we possibly can from the local hinterland , are salads and fresh herbs come from celtic salads in Bell harbour, are beef from Bernard Roughan in Ennistimon , sausages from loughnanes in Galway, cheeses from Tipperary , so you can enjoy the best of local ingredients , all soups and stews are gluten and dairy free and we only use carrageane sea vegetables as thickeners so there rich in good stuff O we get that from wild irish sea veg down in quilty.
